Here’s a delicious and healthy pancake that’s packed with protein. Whip it up fast for a guilt-free Sunday treat!!

Apple Cinnamon Pancakes

1 cup rolled oats (old fashioned)
8 egg whites
1/2 cup 2% cottage cheese
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
Canola oil spray

Combine all ingredients in a blender and process until smooth. Mist a non-stick pan or griddle with the canola oil spray. Heat over medium heat and cook 2 – 3 large pancakes (one at a time if using a small skillet) until browned on both sides. Top with poached cinnamon apples (recipe follows) or serve with a touch of light maple syrup or your favorite jam.

Serves 2 – 3

Poached Cinnamon Apples

2 sweet apples (such as Macintosh, Golden Delicious), peeled, cored and chopped
2 – 3 Tablespoons apple juice or water
1/4 teaspoon cinnamon
1/4 cup chopped walnuts

Heat apple juice or water in a small saucepan with the chopped apples. Cook over medium heat until apples are tender but not mushy (8 – 10 minutes). Sprinkle with cinnamon and walnuts and stir to combine.
