TOFU SCRAMBLE

Ingredients

1 C baby spinach
1 small tomato, chopped
1/2 C crumbled firm tofu
1/2 avocado, cubed
1/2  tsp garlic powder
1/2 Tbsp extra virgin olive oil

Instructions

  1. Heat a nonstick skillet over medium heat, lightly coat with nonstick spray or oil.
  2. Add tofu and garlic powder, saute till almost golden brown.
  3. Add tomatoes and spinach, sauté until spinach is wilted.
  4. Place on plate, top with avocado cubes.

Serving Suggestion:

Place over sweet potato “toast” or whole grain bread
