Chocolate Protein Pancakes


I’ve been busy in the kitchen creating new recipes with Michele from @healthytablebyus (thank you, zoom). Michele, her husband Luiz, and I have been friends for many years, and I never miss an opportunity to see what they’re cooking up in the kitchen! Luiz’s The Healthy Table Cookbook is an all-time favorite.

On the weekends, my girls and I carve out time for longer cardio adventures… biking, hiking, and track workouts. The inspiration to finish is knowing that when we get home, we can indulge in some fabulous weekend food, including this new Chocolate Protein Pancake recipe. It’s beyond delicious!

Chocolate Protein Pancakes

Makes 8-10 pancakes

Ingredients
4 large eggs
2 bananas
3/4 cup rolled oats
1/4 cup KS Wellness chocolate protein powder
2 Tbsp unsweetened cocoa powder
1 tsp ground cinnamon (optional)
1 pinch of sea salt

Topping options:

• Frozen berries (microwave for a minute, drizzle juice and berries on pancakes)
• Almond butter
• Sliced Banana • Fresh strawberries Date Syrup

Instructions

Preheat griddle or skillet to medium heat and spray with non-stick cooking spray.Add eggs, bananas, and oats to the blender. Blend on low for 15-30 seconds until oats are ground and bananas are fully mashed.
Add protein powder, cocoa powder, and cinnamon and blend again on low for additional 30-45 seconds until smooth.
Drop by 1/4 cup full onto pre-heated griddle and cook.
