Roasted Vegetable and Chickpea Sheet Pan Delight
- 1 can chickpeas, drained and rinsed
- 2 medium zucchinis, sliced
- 1 red onion, chopped
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, toss together the chickpeas, zucchinis, red onion, red bell pepper, and yellow bell pepper with the olive oil, oregano, salt, and pepper.
- Spread the mixture onto a sheet pan in an even layer.
- Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned.
- Serve warm as a main dish or side dish.
Feel free to customize with your favorite vegetables and spices, or what’s available from your garden or local market. It’s also a great way to use up any produce you have on hand.
