Sheet Pan Chickpea and Spring Veggie Bake

Ingredients
1 15oz can chickpeas, drained and rinsed
1 bunch asparagus, woody ends trimmed and cut into 2-inch pieces
1 cup sugar snap peas
1 cup cherry tomatoes, halved
1 zucchini, quartered lengthwise and cut into 1-inch pieces
1 red onion, cut into wedges
2 tablespoons olive oil
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley

Instructions:

Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper or foil.

In a large bowl, toss together the chickpeas, asparagus, snap peas, cherry tomatoes, zucchini, and red onion with the olive oil, thyme, paprika, and a few pinches of salt and pepper until well coated.

Spread the vegetable mixture out evenly on the prepared baking sheet.

Roast for 15 minutes, then toss the vegetables and chickpeas and roast for 10-15 minutes more until tender and lightly browned.

Remove from oven and drizzle with the lemon juice and sprinkle with the fresh parsley. Toss to combine.

Serve warm or at room temperature. Goes great with pita, hummus, feta or your favorite protein like grilled chicken or salmon.

The fresh spring vegetables pair beautifully with the hearty chickpeas. Feel free to substitute seasonal veggies you have on hand too. Enjoy!
