Blueberry Vanilla Protein Chia Pudding

When you prepare the chia puddings, use a few mason jars so you can have breakfast ready to go all week long. You can store them for 7 days. Amazing, right?

Blueberry Protein Chia Pudding

Ingredients 

3 tablespoons black chia seeds
2 tablespoons maple syrup ( or preferred sweetener)
½  teaspoon vanilla extract
1 scoop KS Vanilla Protein Powder
3/4 cup coconut milk (or any nut milk)
1 cup Blueberries (frozen or fresh)
½ cup water
2 tablespoon Balsamic Vinegar 
Shredded coconut to garnish

Whisk together the chia seeds, sweetener/ syrup, extract, milk and protein powder in a small bowl. Allow the mixture to sit for 10 – 15 minutes until the mixture has thickened. Give it a stir before serving then add the chia pudding into a jar (or keep it in the bowl). 

Blueberry Reduction

Add blueberries, water and vinegar to a small saucepan over medium-high heat

Bring to a boil and continue to boil 8 minutes stirring occasionally. Turn off the heat and set aside.

To assemble the pudding :

Layer it up with chia pudding, blueberries reduction and coconut flakes.
