Bieler Broth



4 cups water or low-sodium vegetable broth
3 medium zucchini, chopped
4 stalks celery, chopped
1 lb string beans
1 bunch parsley leaves
1-2 cloves garlic (optional)


  1. In a large pot, bring to boil the water (or broth), celery, zucchini, string beans, and garlic.
  2. Boil until vegetables are tender, about 10 minutes
  3. Remove from heat and stir in parsley.
  4. Transfer into a blender or food processor and mix until smooth.
