4 cups water or low-sodium vegetable broth
3 medium zucchini, chopped
4 stalks celery, chopped
1 lb string beans
1 bunch parsley leaves
1-2 cloves garlic (optional)
- In a large pot, bring to boil the water (or broth), celery, zucchini, string beans, and garlic.
- Boil until vegetables are tender, about 10 minutes
- Remove from heat and stir in parsley.
- Transfer into a blender or food processor and mix until smooth.
