Nonstick olive oil or coconut oil spray
1 small tomato, chopped
1 cup baby spinach
3 eggs
¼ avocado, cubed


1.     Heat a nonstick skillet over medium-high heat. Lightly coat with nonstick spray, then add the tomatoes and spinach to the pan.
2.     Sauté until spinach is wilted.
3.     In a small bowl, whisk the eggs. Pour egg mixture into the pan. Cook, stirring with a rubber spatula, until eggs are set.
4.     Top with avocado cubes.
