While warmer weather is always welcome, the world slowly opening up makes this upcoming summer feel like it deserves a little more of a “hoorah!” 

Celebrate the warmer weather with a dinner that makes the most of the seasons’s bright produce. 

Today’s Joy Salad recipe a fresh, vibrant dish. Your plate will be screaming “summer is coming!” 

After months of warm soups and cold-weather comfort food, this recipe is a nice change of pace.

Make the most out of the season’s produce! 

This Joy Bowl combines lettuce with strawberries, radishes, tomatoes, cranberries and hemp seeds with a delectable Lemon Oil Vinaigrette dressing. 

The dressing only takes a few minutes, and any leftovers are delicious on top of chicken or fish throughout the week. 

Joy Salad Recipe

Ingredients

2 C Romaine, chopped
3 strawberries, quartered
2 radishes, sliced
1/2 C cherry tomatoes
2 Tbsp dried cranberries
2 Tbsp hemp seeds
1 tsp jalapeno, chopped
Lemon Oil Vinaigrette

Instructions

In a small bowl or jar, combine the dressing ingredients.

In a medium bowl, toss the romaine, strawberries, radishes, tomatoes, cranberries, and jalapeno together.

Mix dressing well then add to the salad, toss well.

Sprinkle with hemp seeds.

Serve with cauliflower rice or avocado toast.

Lemon Oil Vinaigrette

1 lemon, juiced
1 Tbsp extra virgin olive oil
1 /2 tsp oregano
1 /2 tsp rosemary
Fresh ground pepper
Sea salt
