Yield: 2 servings
- 2 6-ounce salmon filets
- 1/2 tsp salt
- Freshly ground black pepper
- 2 Tbsp extra-virgin olive oil
- 1 Tbsp Dijon mustard
- Lemon wedges
- Place an oven rack six (6) inches from the broiler
- Turn the broiler on high
- Season the salmon with salt and pepper
- Line a pan with foil or a silicone mat
- Place the salmon on the pan. If your salmon has skin on it, place it skin side down.
- In a small bowl, whisk the oil and mustard. Brush all sides of the salmon with the mustard mix.
- Broil for 8-10 minutes, or until the salmon has a brown crust.
- Squeeze a lemon over the cooked salmon filets
