SPINACH AND GOAT CHEESE FRITTATA
Nonstick olive oil or coconut oil spray
1/4 cup onion, diced
2 cups baby spinach
Freshly ground pepper
2 oz soft goat cheese, crumbled
Preheat oven to 425°F. Heat a small nonstick skillet over medium-high heat. Lightly coat with nonstick spray, then add the onion and spinach to the pan. Sauté until the onion is tender and the spinach is wilted.
In a small bowl, whisk the eggs with the pepper. Stir in the goat cheese, then pour egg mixture into the pan.
Transfer the pan to the preheated oven and bake for 20-25 minutes, until eggs are set and the frittata has browned. Slice into wedges and serve warm.
